Crunchy Avocado and Tofu Poke Bowl

Crunchy Avocado and Tofu Poke Bowl

Nutrition, Recipes
Hello friends! I have made my most loved (by me) version of poke bowl! I love eating this more, compared to sushi because nothing is falling out of it, LOL. And now I want to share how I would make poke bowls. Feel free to use or replace any ingredients with others that you'd like. Featured recipes: Eel (Black) Sauce: Click here Yum Yum (White) Sauce: Click here For the yum yum sauce, I replace mayonaise with Vegenaise and butter with coconut oil. Vegan Crab Meat: Click here I only used hearts of palm and Vegenaise in this recipe. Tip, if you're not adding all the other ingredients and are just using hearts of palm and the "mayo," you may want to lower the amount of mayo you use :) Recipe: I don't use…

Red Curry Noodle Soup (Khaub Poob Liab)

Red Curry Noodle Soup (Khaub Poob Liab)

Nutrition, Recipes
As most of you know, I am on a mission to create vegan versions of all my favorite Asian/Hmong recipes. I believe that any recipe out there can be created without using animal products and it will still tastes great. Today I will be sharing with you one of my favorite recipes - curry! Whether it's in noodle soup form or just plain ol' curry with rice, I love the taste of curry. I will also include my video form of this recipe below (psst, I am speaking in Hmong - lol) Let's jump right into the recipe. I went to my nearest local Asian market but couldn't find a few items for the recipe - may be because it's not in season. Since I don't live with any older…

1. Desire [Think and Grow Rich]

Motivation, Personal Development
You may or may not know that I do personal development reading pretty much every day. I have been doing other types of personal development over the years but never reading - I've always thought "reading is for when I'm still in school, I'm out of school, I don't need to read, blah blah blah" and boyyyy was I wrong! Just last summer, I picked up reading and strive to do a little each day. I've finished a couple of books, LOL. But one of my main goals for this year was to read 10 pages (or more) every day so by the end of 2018, I would have read at least 3650 pages - which equates to about 10-15 books (depending on the pages, of course). The reason why…

Spring Rolls with Teriyaki Tofu

Spring Rolls with Teriyaki Tofu

Nutrition, Recipes
Hello all! I just recently came up with a recipe for spring rolls (veganized) but with a little twist. Since spring rolls usually have a very plain taste to it (beside the dipping sauce) I decided to add some taste because I am using tofu - and tofu just kinda absorbs anything, any flavor, that it is cooked in - which in this case is teriyaki sauce. I've always love spring rolls, I think they're so easy to make! We've always used meat - but today we are going to create these with no animals harmed in the process :D I believe there is always a way to make your favorite food in a vegan version. And I have also been working on a project for a Vegan (Asian) Cookbook/Blog.…

Fitness: Why I Started & What Does It Mean To Me Today

Fitness: Why I Started & What Does It Mean To Me Today

Fitness, Motivation, Personal Development
NYOB ZOO! You may know that I competed in bikini/figure bodybuilding shows in the past; some may know that I body-build; some know that I power-lift. I've always been very intrigued with women who are strong and fit. So one day I finally took it upon myself to make the change in my daily routine by adding exercise. Why did I get into Fitness? I got asked this question and here I am to answer it. Question is why did I get into fitness; there's actually a couple reasons why. Keeping my competitive edge alive Growing up, I was always active as a child - although it wasn't thru playing sports, my cousins and I would play outside all the time, chase each other, race, have friendly competitions against each…

Things to know before you decide to compete.

Fitness, Motivation
If you have follow me for a while, you know that I have done a few competitions in my journey. I have always been a competitive person growing up. Although I wasn't involve in any competitive sports, I remember as a child, my cousins and I would race to see who's faster, we play sports for fun, and even compete on stage as a dance group in front of an audience. We all eventually grew out of dancing and I don't play sports like that because I just find that I don't do as well. After I stopped dancing, I wasn't as active as I used to be. So I have to do something to keep my competitive edge alive. When I started my fitness journey, I would follow any…

As a Hmong Daughter

Motivation, Personal Development
Hello everyone! Sorry I have been MIA from this blog post. I have been focusing on some personal things in my life. Plus, I haven't been feeling too well over the last few weeks. It was horrible, I was always fatigued, my body ached, just bad feelings. But thankfully, this week I feel refreshed! I'm able to put in my workouts and just feeling on top of my game! ;D This blog post will be about my personal experiences growing up in a traditional Hmong family, how I stepped out of the norm (bodybuilding, veganism, diet, school/career, etc.), and I hope to give you a concept you can use for any situation in your life. I was going to step out of my comfort zone. I was going to do…

Pan-fried FRIES

Pan-fried FRIES

Nutrition, Recipes
Yes. You saw that right! FRIES!   This recipe is easy, simple, and less than an hour. It probably took about 45 mins to finish the whole process. Keep in mind that my recipes are very minimal. The reason is because one, I'm not a great cook; two, I rather more time focused on my business/fitness. My meals have to be sustainable to me and fit my lifestyle. Sustainability is such a significant word. Every thing you do, if you want to make it part of your normal routine - it has to be sustainable. The reason some people can't stay on top of their exercise or diet is because they are doing sh*t that aren't sustainable. Maybe they're eating 500 calories and then their mind gives up, they end…

WHY I’m going VEGAN

WHY I’m going VEGAN

Motivation, Nutrition
If you haven't already seen my previous post, I have pledge to go VEGAN. What is Vegan? The Google definition of Vegan is : a person who does not eat or use animal products; using or containing no animal products. That means: No animal flesh of any sort: beef, lamb, chicken, salmon, etc. No clothes made from animals: leather, fur, etc. No products that were tested on animals: makeup, lotion, creams, toothpaste, etc. I did a 14-Day Vegan Experience last month. When I finished, I did make the choice to be a vegetarian. I've always considered myself an animal lover. I love zoos, aquarium, wherever there's animals, I loved going! My Love for Animals Growing up, my parents raised chickens, ducks, sometimes pigeons. I always helped my parents feed the chickens and…
